Ingredients
  

  • 1 lb Ground Chicken I love Springer Mountain Farms ground white chicken
  • 1 Large Egg
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1 tsp Dried Parsley
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1 Slice Gluten-free Bread, crumbled into small pieces I used Canyon Bakehouse Ancient Grain

Method
 

  1. Preheat oven to 350°F
  2. Add ground chicken, egg and seasonings to bowl. Crumble bread into small pieces and add to ingredients in bowl. Using hands or a utensil, mix all ingredients until combine. The mixture will be slightly sticky. You can lightly wet your hands to more easily form form 8–9 meatballs.
  3. Place meatballs on a parchment-lined pan and bake for 20–21 minutes, until internal temp reaches 165°F.
  4. Optional: Pan-sear cooked meatballs in olive oil for extra color and crispy texture—just a quick browning to avoid overcooking.

Notes

Serving Suggestions: Serve over your favorite pasta or rice—like lemony gluten-free Stelline pasta—or try your own sauce, herbs, or toppings. Adding greens like spinach or roasted beets makes it a simple, balanced meal. This recipe is flexible, so you can adapt it to what you have on hand and make it your own!
